Ingredients
  1. Broth;
  2. 2l water
  3. 1 whole chicken
  4. 8-10 cloves of garlic, peeled and grated (the more the better)
  5. 2 large cubes of ginger (peeled)
  6. 2 onions, thinly sliced
  7. salt and pepper to taste.
  8. 2 cups of green veg – I usually use bok choi but this version I used broccoli as its my children’s favourite.
  9. 1 pack glass noodles or zucchini noodles (zucchini cut into thin strips)
  10. 1 teaspoon fish sauce per bowl
  11. 2 limes
Instructions
  1. Place water, chicken, onion, 5 cloves of garlic, salt and pepper a in large pot. Boil for 2 hours.
  2. Add remaining garlic and broccoli, simmer for 5 more minutes.
  3. Cook noodles separate according to instructions (cooking times vary depending on brand). Rinse in cold water to prevent the noodles sticking together.
  4. If using zucchini noodles, no need to cook separately. Pouring hot stock over the top of the zucchini noodles is enough to cook them.
  5. Place noodles in bowl. Pour hot stock over the top, add meat and vegetables from soup pot.
  6. Add fish sauce an lime juice and serve.
Notes
  1. This is my child friendly version. For adults I use more asian greens or kale and I add fresh chilli, bean spouts, coriander and asian basil.
  2. Cooking this soup with a whole chicken and for 2 hours creates a stock (or bone broth) that if full of healing nutrients.
  3. Chicken soup has been used for generations as a traditional healing remedy. I cook up a batch of this for my family as soon as they are sick. In summer or winter for colds, flus or tummy bugs this it the first recipe I turn to.
  4. Why is it healthy?
  5. Garlic - antibiotic, immune boosting properties.
  6. Ginger - anti-inflammatory, good for digestion and nausea
  7. Onion - contain properties valuable for treating coughs, colds and tummy problems
  8. Green vegetable - high in vitamins and antioxidants
  9. Stock - or bone broth. I need a whole article for the benefits of bone broth but over all its hydrating, and contains important nutrients for digestive and immune health.
  10. Whole chicken - when making stock it is important to use bones, joints and skin. By using the whole chicken in this way and cooking for 2 hours, you extract all the nutrients important for immune health.
